Tator Tot Casserole: The Ultimate Comfort Food

You guys are going to love this.  Tator tots, cheese, beef- Mmmmm what’s not to like?  This is one of my go-to dishes.  It’s simple, it has few ingredients, it’s delicious… It’s the ultimate comfort food!  What’s your go-to comfort food??

Here is what you'll need:

  • 1 tbsp. olive oil
  • 1.5 tbsp. minced garlic (more or less depending on how much you like it)
  • 1.5 tbsp minced onions (You can dice a yellow onion and use that, if you have the time.)
  • 1 tbsp. Italian seasoning
  • 1 tbsp. parsley
  • cooking spray
  • 2 cans condensed tomato soup
  • 3/4 bag of shredded mozzarella cheese (or Italian blend)
  • 2-3 tbsp. grated Pecorino Romano cheese
  • 3/4 bag frozen extra crispy tator tots
  • 1.5 pounds lean ground beef (not pictured)
  • salt and pepper to taste (not pictured)

Here's what you have to do:

  1. Set your oven to bake ate 400 degrees.
  2. Pour olive oil into skillet.
  3. Brown beef on medium heat, stirring in garlic, minced onions, salt, and pepper halfway through.
  4. Once beef is browned, add the tomato soup, Italian seasoning, and parsley.  Lower heat and stir.tator tot casserole: the ultimate comfort food- in the pan
  5. Spray a 9×12 glass dish with cooking spray.
  6. Pour beef mixture into dish in an even layer.

  8. Cover with frozen tator tots.
  9. Sprinkle tots with Pecorino Romano.tator tot casserole: the ultimate comfort food- before going in oven
  10. Bake for 30 minutes, uncovered and on middle rack.
  11. Optional- Broil for 3-4 minutes after baking for crispier tots- But be careful not to burn them!  It can happen very quickly.

Crockpot Buffalo Chicken Tacos (4 Ingredients!)

Hey, everyone!  Your mouth will be watering after you read about these crockpot buffalo chicken tacos.

No joke.  This is probably one of the easiest (if not the easiest) crockpot recipes you will ever try.  And it will most likely end up being your favorite way to prepare and eat chicken tacos.  This recipe yields extreme flavor with a hint of spice.  (This dish is far from what I would consider to be spicy.)  Plus, if you really aren’t a spice girl or guy, the delicious Daisy Squeeze Sour cream you will squiggle on top of your completed tacos- You can’t eat just one- combats any unwanted spiciness. read more

Savory Sunday Crockpot Chili

This chili recipe is perfect for Sunday (or Saturday).  One of its powerhouse ingredients is BACON (’nuff said), so you can fix a batch of bacon in the morning to go with your breakfast or brunch, and throw the rest in the crockpot with the chili.  Let me guess…I had you at bacon, right? 🙂

Taco Soup | Ready in 30 Minutes or Less

It’s going to be a little chilly for the first weekend in April, so you’ll need to warm up with this delicious soup.  If you like tacos (who doesn’t?), your tastebuds will love this soup.  You can thank me later. 🙂
You probably have most of these ingredients on hand.

Here's what you'll need:

Taco Soup Ingredients

  • 1-1 1/2 pounds lean ground beef (not pictured)
  • 1 tbsp. olive oil
  • One med. green bell pepper, diced
  • One med. yellow onion, diced
  • 1 tbsp. minced garlic
  • 1 tbsp. parsley
  • 2 tsp. chilli powder
  • salt and pepper (not pictured)
  • 16 oz jar of medium picante sauce (mild if you don’t like much heat)
  • 32 oz box of beef broth (I choose lower sodium, and if you only have chicken broth around, that works, too!)
  • 14.5 oz can of diced tomatoes (undrained)
  • 1 cup of dried pasta mini wheels (Small shells or elbows also do the trick.)
  • Optional: any kind of shredded cheddar cheese for topping
  • Optional: sour cream for topping
  • Optional: tortilla chips for topping (I love Tostitos scoops!)

Let's get cooking!

Heat oil in medium saucepan. Add diced peppers and onions and sauté on med. heat for a few minutes, being careful not to burn them.

  • Turn heat to high and bring to boil.

  • Reduce heat, cover, and simmer for 10 minutes, stirring periodically.

  • Scoop into bowls and top with cheese, sour cream, chips, and anything else you like.

    Easy Sausage and Pasta with Red Wine Sauce

    If you like pasta in general, this will become your new favorite dish!  If you don’t eat meat, just eliminate the sausage.  It will still be undoubtedly delicious!  The balsamic dressing and red wine give the dish a unique gourmet taste.

    This is the perfect dish to make if you’re a busy mom.  My husband doesn’t get home from work until after 7pm, so I feed my girls earlier in the evening and eat with him after he gets home.  It really is an easy recipe for such a special sausage and pasta dish.  I make the sauce before I take the kids up for a bath and let it simmer, covered and on low, in the meantime.  It can probably simmer for hours if you needed it to, but you would have to stir it occasionally.  It is really convenient, since it only takes about 10 minutes to get the sauce going, and my girls can handle being without my complete attention for that small amount of time!  Then, when my husband and I are finally ready to eat, I just boil the pasta and throw it into the sauce.  Who needs take out? read more
